Sunday Recipe: Chili Cheese Dip





This Recipe Yields 15 servings:
 


Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1 (15 ounce) can chili without beans
  • 16 ounces shredded Cheddar cheese
  • 1 (13.5 ounce) package nacho-flavor tortilla chips


Directions

  1. Spread cream cheese on the bottom of a microwave-safe dish. Spread a layer of chili over the cream cheese. Finish with a layer of shredded cheddar cheese. Microwave for 5 minutes or until the cheese melts. Serve with spicy nacho tortilla chips.

**Editors Note: This recipe also goes great with regular nachos and the scoop-able chips. Rather than putting it into the microwave, my husband prefers the oven. I simply set the oven to 300* Bake. And apply the same sequence to a cookie pan (I DON'T spray it with cooking spray). I simply remove in 5-6 minutes, when the cheddar melts. This is always a BIG hit on the Sunday Games and its so fast and simple you can't go wrong. I'm never forced to be away from the game too long and most of the time, if I am running low, I can make another batch of dip in the commercial time so I don't miss any part of the game.

Cream Cheese Alfredo Sauce Recipe




 This Recipe Yields 6 Servings:


Ingredients

  • 2 tablespoons butter
  • 2 portobello mushroom caps, thinly sliced
  • 1 (8 ounce) package cream cheese
  • 1/2 cup butter
  • 1 1/2 cups milk
  • 6 ounces grated Parmesan cheese, or to taste
  • 1 clove garlic, crushed
  • 1 tablespoon minced fresh basil leaves
  • ground white pepper, to taste

Directions

  1. Heat 2 tablespoons of butter in a skillet over medium heat. Stir in the mushrooms; cook and stir until softened, about 5 minutes. Set aside.
  2. Meanwhile, melt the cream cheese and 1/2 cup of butter in a saucepan over medium heat, stirring occasionally. Stir in the milk and Parmesan cheese, mixing until smooth. Add in the garlic, basil, and white pepper. Simmer for 5 minutes, then remove the garlic. Stir in the cooked mushrooms before serving.

 **Editor's Note: I poured the Cream Cheese Alfredo Sauce over Elbow Pasta and my husband absolutely LOVED the way the sauce brought out the pasta. I have also tried preparing this over bowtie pasta and they both lock in the sauce for exquisite flavor! The most recent time I diced up some (precooked) chicken and simmered it on low for the remaining 5 minutes (I left the garlic in the sauce) and then poured it over the bowtie pasta, served with a side of garlic bread and it served as the perfect easy to prepare meal! It was an excellent hit with myself and my husband (who at times can be a very picky eater)!
